I LOVE this recipe and its definitely a favorite in our household! My husband requests this meal at least 2-3 times a month and I am happy to oblige because its so easy to make. I guarantee you already have most of these ingredients in your kitchen. When you hear ‘chili’ you might think of cold weather but I promise this is a year round meal that will quickly earn a permanent spot in your meal rotation ;)
Cream Cheese Chicken Chili
INGREDIENTS
2 chicken breast
1 block of cream cheese
1 can Rotel
1 can corn, not drained
1 can black beans, drained + rinsed
1 packet Taco Seasoning
1 packet Ranch dressing mix
DIRECTIONS
1. Mix all ingredients together in a crockpot and cook o low for 6-7 hours.
2. After 4 hours, remove chicken and shred. Whisk other ingredients to smooth out the cream cheese. Replace the shredded chicken and cook the remaining time.
3. Enjoy!
If you want to add some spice you can add 1 t cumin, 1 T chili powder and 1 t onion powder. I love to pair this meal with tortilla chips, cornbread, or a simple salad. You can place all ingredients except cream cheese in a freezer bag and freeze for a quick freezer meal later. To cook after freezing, place the contents of the freezer bag in the slow cooker and cook on LOW. There is no need to thaw the freezer bag of ingredients before adding to the slow cooker.
