Saltine Toffee Cookies

If you love caramel and chocolate, then this recipe is for you! Also known as Christmas Cookie Crack (and for good reason haha!), these are the most DELICIOUS cookies I’ve ever had! As a child my momma used to make these special just for Christmas but now that I am an adult, I make these year round 😊 I have tried altering this recipe to make it just a bit healthier and I have discovered some success that I will share with you. However you choose to make this recipe your own, I promise you will LOVE it!


Saltine Toffee Cookies (aka Christmas Cookie Crack)


INGREDIENTS

Pam (can substitute with a Keto friendly cooking spray).

1 cup of Butter

1 cup of packed Brown Sugar (can substitute Truvia Brown Sugar)

8 oz Chocolate Chips (can substitute No Sugar Added Chocolate Chips)

Graham Crackers (can substitute Saltine Crackers)

Chopped pecans (or any other topping)


DIRECTIONS:

1. Heat oven to 425°F.

2. Line cookie sheet with tinfoil and spray with cooking spray.

3. Place crackers covering the entire sheet. If using Saltines make sure they're salt side down.


4. In a small pot melt brown sugar and butter until it turns into a caramel color + is bubbling throughout for a few minutes.

5. Stir continuously.


6. Remove from heat and pour evenly over crackers.

7. Bake for 3-5 minutes.


7. Remove and pour chocolate chips evenly over. Spread chocolate once its melted.

8. Top with your favorite topping! Chopped nuts or sprinkles are both wonderful!



9. Freeze for at least 20 minutes and then break into pieces.

10. Enjoy!



I do believe the cookies are at their prime if you use graham crackers, however, saltines are a great substitute if you are trying to watch your sugar intake. I do not notice much of a difference by substituting Truvia brown sugar and No Sugar Added Chocolate Chips other than the caramel mixture takes a bit longer to “thicken” up / turn the caramel color and the chocolate chips take a little bit longer to melt in order to spread. In these instances, I am just stuck standing a little longer at the stove stirring continuously until the caramel mixture turns the proper color and then after sprinkling chocolate chips over the cookies, I will place them back in the oven for 1 minute just to help melt along the no sugar added chocolate.


It is also important to note to make sure you let the cookies freeze at least 20 minutes! After that you can either break them apart or cut them with a large, sharp knife to eat! Any cookies I don’t eat I do place back in the freezer to enjoy later as they keep frozen for quite some time! Although they never really last more than a couple weeks in our household 😊
