Momma always said breakfast is the most important meal of the day! And if you’re like me, you tend to gravitate towards the sweet breakfast items. If pancakes are an option, then that is 100% what I am choosing. Pancakes, however, have a bad rap for being chock full of carbohydrates and coated in warm, sugary syrup. BUT I am here to tell you that you can have your pancakes and eat them too!
Let me introduce you to my new favorite pancake mix - Birch Benders, a Keto friendly pancake and waffle mix made with almonds, eggs, tigernut, coconut and buttermilk that contains no added sugar and is grain free (also making this gluten free)! What I love most about this pancake mix is how easy, quick and guilt free it is to whip up some delicious and fluffy pancakes for breakfast, brunch, and heck even dinner. All you need it water, fat free cooking spray, sugar free syrup, and fruit toppings (if desired). With only 5g net carbs per serving you will meet your macros and have a head start meeting your protein goals for the day with 9g of protein per serving.
Keto Friendly Pancake Recipe
INGREDIENTS
1/3 cup Birch Benders mix
1/4 cup water
Fat Free olive oil nonstick cooking spray
Blueberries or other fruit (if desired)
Sugar free syrup
DIRECTIONS:
1. Mix Birch Benders pancake mix and water until combined. Batter will be thin at first so let it sit for a few minutes to thicken. If thicker pancakes are desired then use less water.
2. Cook over medium-high heat on a preheated skillet that has been greased with fat free olive oil nonstick cooking spray.
3. Flip once batter starts to bubble.
4. Top with fruit topping (if desired) and sugar free syrup.
5. Enjoy!
You can purchase a 10 oz bag for $7.99 directly from Birch Benders website or you can go the cheaper route and pay $7.39 at Target or $6.49 at Thrive Market. Through my experience, I can make approximately 16 pancakes (2 pancakes per serving) from one 10 oz bag.
